What we had for dinner
I’ve always loved eating healthy, but once I became a mom, I realized getting a balanced dinner on the table—that everyone will actually eat—is a whole different game. With three kids (including a couple picky eaters), I got tired of cooking two separate meals every night just to make everyone happy.
You’ll find chicken, steak, shrimp, salmon, pork, turkey, and ground beef recipes with full nutritional info and easy swaps if you’ve got a picky eater in the house. (If one of my kids doesn’t like something, I’ll sub in a different protein or veggie without overthinking it. You’ll see that flexibility throughout this book.)
My hope is that these recipes help you find your own balance—whatever that looks like for your family—and make dinnertime just a little bit easier.
